Orange Feta and Olives salad

Orange Feta and Olives salad

This salad makes me feel like I am on some Greek island on a sunny day πŸ™‚

You will need:

  • Babay spinach or any mixed greens
  • few slivers of red onions
  • segments of half a large orange – deseeded and deskinned
  • kalamata olives – a handful
  • handful of crumbled feta cheese
  • 2 tbsp orange juice – I usually save the juice in a bowl (which I which the dressing in later) while I am removing the skin and seeds. If the oranges are too sweet use some lemon juice+orange juice
  • 1 tbsp olive oil
  • salt and some poppy seeds

Procedure:
1. Layer a bowl with some greens – I used baby spinach
2. Top with a few thin slices of onions
3. Next add some fresh orange segments (without skin and seeds) save any juice from cutting the oranges for the dressing
4. Add some kalamata olives or any other type of olives that you like!
5. Next add generous amounts of crumbled feta cheese

6. For the dressing – whisk together 2 tbsp orange juice, 1 tsp EVOO , salt and some poppy seeds.  Drizzle on the salad and serve.

Serves 1. can be easily scaled up

  • You can use any mixed greens, kale tastes very good as well
  • For the dressing you can completely skip the poppy seeds and just make a simple orange juice and EVOO dressing – tastes just as good πŸ™‚ Add a little honey if the orange juice is not sweet enough and a touch of lemon juice if it’s not tart enough

If available you can also add some pomegranate kernels to this salad – it looks and tastes great!
