Caprese Inspired Salad
Not-your-regular caprese salad
You will need:
mixed baby greens
tomatoes – cubed or cherry tomatoes – halved
a handful of kalamata olives 0 halved
half a cup of mozzarella chunks
croutons
1 tsp of olive brine
1 tsp pesto sauce
Prcedure:
1. Layer baby greens in a bowl
2. Add a handful of tomatoes – thick slices cut in quarters or halved cherry tomatoes
3. Top this with some kalamata olives – halved
4. Next add chunks of fresh mozzarella
5. Finally add some croutons. I made mine from leftover pita bread – just toast pieces of bread with some butter on a hot griddle and season with Italian herbs.
6. For the dressing – whisk together a tablespoon of brine from the jar of olives and a teaspoon of pesto sauce.
7. Drizzle on the salad and enjoy!
Serves 1, can be easily scaled up.
For the pesto – grind together – handful of basil leaves+2 cloves of garlic+4-5 toasted walnuts and olive oil
If you don’t have the olive brine, just whisk the pesto sauce with some olive oil, lemon juiceand salt. This salad also tastes delicious with a balsamic dressing like the one in my grape and feta salad
