Beetroot walnut and goat cheese salad

This is Hands down my most favorite salad. my go-to lunch option! I can eat this everyday if I had to 🙂

You will need:

  • Baby spinach (preferred) or any mixed greens
  • 1 small beetroot – steamed, peeled and cut in small cubes
  • fresh goat cheese OR hung curd
  • candied walnuts – break walnuts into little chunks, toast on a griddle and add sugar when hot – let the sugar melt and coat the walnut pieces, let cool
  • 1 tsp Balsamic vinegar
  • 1 tsp olive oil
  • a pinch of brown sugar
  • a few strands of fried onions – optional

Procedure:

1. Layer baby spinach in a bowl
2. Add the diced beetroot
3. Top this with chunks of fresh goat cheese (as much as you like – I can’t ever have enough goat cheese in anything!)
4. Next top with some candied walnuts – break walnuts into little chunks, toast on a griddle and add sugar when hot – let the sugar melt and coat the walnut (I make a large batch of these and store in an airtight glass jar when completely cooled)

5. Add some fried/ caramelized onions (optional)

6. For the dressing – whisk together a teaspoon EVOO+ 1 tsp lemon juice+ 1 tsp balsamic vinegar and 1 tsp of brown sugar or honey.

7. Drizzle on the salad and enjoy!
