Simple, tasty, healthy-ish
One of my favorite recipes to make. I don’t remember where exactly I got the recipe from. a little from my mom, a little from my aunt from Goa. But I have one definite memory of making this on one family vacation. We had packed all the spices and a bottle of oil, a skillet and a kerosene stove in our car trunk. We were traveling to some beach in Konkan. The plan was to buy fresh local fish, set up our mobile kitchen near some farm or woods by the beach and make fish fry 🙂 how exciting, so much fun!
What can I say we are a foodie family, and we like our fish fresh and cooked only a certain way 😛
So, here’s the recipe. Its extremely simple to make, you cannot go wrong! I sincerely hope that this recipe reminds you of your favorite Indian beach vacation.
You will need:
2 fresh Fish filets, cut into medium sized pieces washed under cold running water (I usually use Tilapia and cut 4 pieces from each filet) – Please don’t use frozen fish, not for fish fry!
For Marinade:
1 tbsp ginger garlic paste
1 tsp red chilli powder
1/2 tsp corriander powder
Juice of 1 lime
1/2 tsp turmeric
1/2 tsp asafetida
salt
For Coating:
2 heaped tbsp rice flour
1 heaped tsp fine semolina (rawa)
a dab each of red chilli powder, salt, asafetida and turmeric
Oil for shallow frying
1. Take the lime juice in a bowl and add all the marinade ingredients to it and make a paste (as shown in the picture)
2. Take the fish pieces and generously apply the paste to each on both sides and keep in a clean dish
3. Repeat for all the pieces of fish and set aside for 15-20 minutes
4. Dry mix the ingredients for coating in a flat plate
5. Heat about little over a tablespoon of oil in a frying pan – then reduce heat to medium flame
6. Gently coat both sides of each marinated fish piece with the flour mixture
7. place the piece in the hot frying pan. Repeat this for all the fish pieces
8. let it sear for about 3-4 minutes, should be golden brown
9. Flip the pieces, making sure not to break them and cook on the other side for a couple of minutes
10. Once golden brown, remove from the heat and serve hot
