Narali Bhat

You will Need:

  • 1 cup Basmati rice (old)
  • 1 cup fresh shredded coconut
  • 1.5 cups jaggery (or you can also use 1/2 cup sugar+1 cup jaggery, do this especially if yourjaggery is too dark/ strong)
  • 2-3 cardaom pods
  • 2-3 whole cloves
  • dry fruits (raisins and cashewnuts)
  • ghee
  • cardamom powder
  • saffron
  • water

Procedure:

  • wash the rice thoroughly, let it drain and rest for at least half an hour
  • Heat 2.5 cups of water in a pan
  • In a separate pan (preferaby non-stick) heat 2 tbsp of ghee and add the cardamom pods and cloves to it. saute for a few seconds and add then the washed rice and saute for a a couple minutes
  • Then add in the boiling hot water and cook covered until the rice is well cooked
  • Remove in a large flat dish and let it cool.
  • In a pan heat a couple tbsp of ghee and add the dry fruits and toast lightly.
  • Next add the shredded coocnut to this. saute for a few minutes. then add the jaggery and sugar. mix well and stir continuously until the jaggery and sugar melt and dissolve completely in the mixture.
  • Add the cooked rice to the sweet coconut mixture and add a pinch of salt
  • Mix everything well and season with some cardamom powder and saffron threads soaked in warm milk
  • Drizzle some ghee on top and Cook covered for a few minutes until steamy.
  • Serve warm garnished with some cashewbuts
