Narali Bhat
You will Need:
- 1 cup Basmati rice (old)
- 1 cup fresh shredded coconut
- 1.5 cups jaggery (or you can also use 1/2 cup sugar+1 cup jaggery, do this especially if yourjaggery is too dark/ strong)
- 2-3 cardaom pods
- 2-3 whole cloves
- dry fruits (raisins and cashewnuts)
- ghee
- cardamom powder
- saffron
- water
Procedure:
- wash the rice thoroughly, let it drain and rest for at least half an hour
- Heat 2.5 cups of water in a pan
- In a separate pan (preferaby non-stick) heat 2 tbsp of ghee and add the cardamom pods and cloves to it. saute for a few seconds and add then the washed rice and saute for a a couple minutes
- Then add in the boiling hot water and cook covered until the rice is well cooked
- Remove in a large flat dish and let it cool.
- In a pan heat a couple tbsp of ghee and add the dry fruits and toast lightly.
- Next add the shredded coocnut to this. saute for a few minutes. then add the jaggery and sugar. mix well and stir continuously until the jaggery and sugar melt and dissolve completely in the mixture.
- Add the cooked rice to the sweet coconut mixture and add a pinch of salt
- Mix everything well and season with some cardamom powder and saffron threads soaked in warm milk
- Drizzle some ghee on top and Cook covered for a few minutes until steamy.
- Serve warm garnished with some cashewbuts
