Gape Feta and Kale salad
You will need:
a bunch of baby kale or any mixed greens
a few slivers of red onion
1 small cucumber – cut in cubes
10-15 red grapes – halved
a handful of crumbled feta cheese
1 tsp EVOO
1/2 tsp Balsamic vinegar
1/2 tsp lemon juice
salt, pepper and rosemary
Procedure:
1. Layer baby kale in a bowl
2. Add a handful of thin slivers of red onion and cucumber cubes
3. Top this with some red grapes – halved
4. Next add some crumbled feta cheese
5. For the dressing – whisk together a teaspoon of extra virgin olive oil, balsamic vinegar and a teaspoon of lemon juice – add some black pepper or rosemary and some salt (sparingly as the feta is quite salty)
6. Drizzle the dressing on the salad and serve!
This recipe serves 1, but can be easily scaled 🙂
