Dum Aloo

I dont know what it is about this dish – fry potatoes then add them to a gravy to become soggy – it goes against my principles and yet I love it..!

So I did one modification – I “fry” the potatoes in an airfryer – again if you know me, I am all about frying what needs to be fried – no compromises. The only compromise I’ll make is in the portion I eat not in the way its cooked, but trust me this one works!! just as good as the actual one 🙂 Here’s the recipe

Serves 3-4

You will need

  • One bag of baby potatoes (~1.5 lbs)
  • One large onion
  • One ripe tomato and/ or some tomato paste to enahnce the impact)
  • whole spices – cinnamon (one piece), clove (1), black peppercorns (4-5), small piece of star anise, 1/2 tsp of shaha jeera
  • powdered spices – roasted corriander and cumin powders, turmeric, red chilli powder and 1 packet of maggi masala-e-magic (this is my secret ingredient!) if you dont have/ want to use maggii masala, you can use kitchen king masala instead
  • ginger-garlic paste
  • oil or ghee, oil spray
  • cilantro

Procedure:

  • Wash and peel baby potatoes
  • poke holes in the baby potatoes with a fork
  • spray the potatoes with some oil spray and line on a baking tray lined with foil
  • Air fry on high for 10-15 minutes – different airfryers have different intensity so fry until they are golden brown on the outside and fully cooked trhough – check by inserting a fork/ skewer)
  • Set the fried potatoes aside and start making the sauce
  • In a pan heat 2-3 tbsp oil or ghee and add the whole spices and let them sizzle, next add the finely chopped red onion and ginger garlic paste – saute until soft then golden-brown
  • Next add chopped tomatioes along with some tomato paste for extra richness and add all the powdered spices – red chilli powder, corriander and cumin powder and turmeric
  • Once Oil start to leave, add a touch of boiling water and deglaze the pan and cook until oil leaves the sides again.
  • Next add the maggii masala and saute until aromatic
  • Finally add more boiling hot water to the consistency you like and add salt to tatse and a pinch of sugar to balance the flavors.
  • Finally add the fried potatoes and lots of cilantro – serve fresh!
