Black Bean sliders

Black Bean sliders

I created this recipe to recreate my favorite – SMASH burger’s black bean burger.

You will need:

for the patty:

  • 1 can of black beans
  • 1/4 red bellpepper (or any other color is fine, I like the flavor that the red one brings the most in this recipe)
  • 2-3 cloves of garlic
  • 1 medium potato, boiled and peeled
  • 1/2 cup bread crumbs
  • seasonings – 1 tsp cumin powder, 1/4 tsp coriander powder, 1/2 tsp onion powder, 1/4- tsp smoked paprika, 1/2 tsp ancho chilli powder, 1/4 tsp dried oregano
  • salt
  • oil for grilling/ frying

sauce+toppings:

option 1:

chipotle aioli – mix vegan or regular mayo with chipotle hot sauce of choice

toppings: sliced onion+sliced tomato+sliced jalapenos, some fresh spinach or lettuce

Option 2:

truffle aioli – mix vegan or regular mayo with a touch of garlic powder, pepper powder and truffle oil

toppings: grilled mushroom slices+grilled onions+swiss cheese

slider buns/ burger buns or dinner rolls

Procedure:

  • drain the can of beans and let stand for some time, so that its dry when you use it
  • You can sue the juice from the beans to make your own vegan mayo. Recipe here
  • blitz together in a food processor the drianed black beans, the garlic and red bellpepper – set aside
  • keep all the toppings and sauces ready before you start making the patties
  • take the ground bean mixture and add chopped boiled potatoes and all the seasonings except salt and mash together. I also added cilantro – its completely optional
  • finally add salt and breadcrumbs right before you are ready to shape and grill/ fry the aptties
  • shape patties to fit your buns. this recipe makes 4-5 large burger patties of 8-12 small slider patties.
  • shallow fry on a griddle or grill brushed with oil

to assemble the sliders:

  • toast the buns with butter
  • add a layer of flavored mayo (aioli) and place the patty cooler side down, so that it doesnt make the mayo melt
  • next add cheese/ onion, rest of the veggies and serve hot!
